Hi Sunseeker......long time no.....
I'm looking for a recipe for the ones sold in Santa Cruz market. Theres a metal disc that closes and folds it in half. They are like a circular disk first.:)

If you go in any alteza supermarket they have the pastry to make empanadas frozen in the freezer cabinets. They are in small circular white packets with blue writing. Pastry is called 'masa' in spanish

Unfortunately there are no Alteza supermarkets here in Dublin!!!! I would like to have a go at making them myself from scratch. Any ideas??

I have several Canary recipe books and will have a look tomorrow and get back to you.
The pastry is nothing complicated.....any pastry such as for Cornish pasties or meat pies will do.
But what sort of filling were you looking for, as there are many things such as tuna or potato that can be put in an empanada?
I'm not sure what they use for filling in the Santa Cruz market bakeries but I'll see what is in my recipe books.

Any short rust pastry recipe will do. Half fat to flour. Rub into breadcrumbs then bring together with water. Roll it out and cut it round a bowl. Put in filling then fold the circle in half.

Your not thinking of arepas are you ?? as said empanadas are just pies ?

Arepas are Venezuelan pancakes made with corn flour -then deep fried - you split them in half - you can take out the stodgy filling and you are left with a crusty shell. They can be filled with anything - tuna, ham and cheese, even braising steak and gravy (carne mechada)

Surely Empañadas are just Continental Forfar Bridies ?

Arepas are quite different to empanadas but it depends what kingbaker is looking for.
Empanadas here in Canarias can be sweet (such as "truchas" (http://saborgourmet.com/wp-content/uploads/la-receta-de-las-truchas-de-navidad-2013-canarias.jpg), those half moon shaped fried little pastries covered in sugar and filled with either sweet squash ...."cabello de angel"...or sweet potato) or savoury, filled with mixtures of tuna, chorizo, cheese, spinach or other things and usually deep fried.

I haven't had much luck looking in my Canary Island recipe books for empanadas ....which surprises me....as most recipes I found are for truchas, the sweet pastries sold around Christmas time.
As empanadas are a pastry typical of many areas of Spanish or South American cooking, but not solely a Canary recipe, you would probably find just what you're looking for on that link to that Argentinian website, www.laylita.com mentioned above.

Another maddening thing about many Canary Island recipes in books or even on websites is the lack of exact amounts for ingredients.
There is a tendency to avoid giving exact fluid ounces or milliliters, and instead using the term "a little glass of...." which leaves you guessing what size glass could be used.

Here's one recipe for the dough to make truchas, the sweet turnovers:

3 dessertspoons of lard
500 grams flour
1 small glass of olive oil

But I did find one online recipe for the trucha pastry as:

500 grams flour
125 grams pork lard
190 ml water
salt ( no amount given)
So if you want to try that.....do the following:

1. slightly warm the water and add salt
2. soften the lard and mix it into the flour using hands
3. add lukewarm water a little at a time, mixing with hands until the dough holds together and unsticks from your hands.
4. let it rest 10 - 15 minutes
5. cut circles, fill with desired filling, fold over and press with fork around edges
6. deep fry until golden

In this case you could use a savoury filling if that's what you are looking for.

I have found that a four ounce glass is what they are probably referring to in these Canary recipes that say "a glass of...."

Of course I'm going to say no!! Sorry Mrs Monkey but these Emps are baked in a oven......there must be 10 little bar type little shops
where the older guys stand and smoke and have a beer, outside the small (tiny) shop, along by the taxi rank outside Nuestro Virgin.......
market in Santa Cruz. It may be possible that they are bought frozen by the case, but I did once see a metal thingy that folds one in half.
It would be very tedious to make a large batch with this one thingy though!!

Flavours that I tasted were Ground Spicey Chicken; Spinach :Mushroom ; Spicey ground beef...can't remember the rest, but they were

Fairly close...but they look like puff pastry, and are three times the size of my beloved Emps which sell for about a €1.00:tiphat::wave:

One brand of cornflour used for arepas comes in a yellow bag and is sold in many places worldwide. It's sold in supermarkets here (also in Canada so says my daughter) as well as Venezuela. The brand is P.A.N. and it looks like this: 5342

...and an arepa in hand looks like this (no it's definitely not an empanada)....this one is chicken & guacamole:

It's as CB says below - I've found the sell it in Waitrose tho I doubt it up here - off to London soo so will look there
