Try Out Market stall

Hello,
Has anyone any ideea if for example for the Sunday Market in Los Christianos i can rent a stall just for a day to try out with no need of paperworks?
One of the staff members told me this but im not sure if we understood each other well.
Does anyone know about this? DO i need paperworks just to try it out?
Also are there any other markets that dont require paperwork?
