If you can't buy it in Mercadona I'm sure Mark (Irish owner) of The Willows in the Apollo Centre serves it in his restaurant
He might even let you know where you can buy some

I understood Irish soda bread was made with sour dough ,maybe mistaken
Other thought, the Pepa food outlet in Los Cristianos has huge selection of different foods
