It seems that most of the historical villages, museums and interesting sites are on the North part of the island, but are there any places on the South side? And how easy is it to get around on the South side? Taxi? Bus?

Getting around the Island by bus is fairly straightforward and relatively cheap ,especially if you purchase a Bono Card which is a prepaid card that gets you up to a third discount on fares.
Adeje, Vilaflor, Icod ,Masca,Candelaria , Arona,Teide all accessible by bus and many more - you can go round the whole island in a day stopping off at places by bus for around €16.

I would recommend El Medano. Fantastic communal environment with some great restaurants and bars

simple answer no. The South is a beach resort. The buses are good, however the drivers dont expect to have to speak English, but are helpful if you can speak Spanish. El Medano is a charming place but if your not a kite surfer theres very little of interest. Santa Cruz has many places of interest, and a great tram service, but again better if you can speak a few words of the local lingo. If you travei on a bus other than on the main coast roads take sea sickness tablets before you go.
