Where to keep mortgage originals etc?

Where should we keep all original documentation releated to our apartment in Tenerife? There is the mortgage contract, Endesa, Aqualia, home insurance etc. We live in Sweden och spend vacations on Tenerife. Sometimes we need these documents when communicating from Sweden and vice versa. Where would it be appropriate to keep copies?

Originals in Sweden. Photo copies on your smart phone. Which could then be printed anywhere if required.
