Hi all, can anyone tell me how we go about getting our social security sorted and where do we go to do it?? thanks :0)

Not sure what you really mean by this can you be a bit more specific;
do you want to get a number for the first time and start paying contributions, are you employed self employed? , do you mean you want to get social health care? are you paying contributions and something went wrong? etc etc etc.

we want to get a number for the first time. A couple of jobs have asked for NIE numbers and Social Security numbers

You don't say where you are, but assuming the south of the island you need to go to Los Cristianos INSS - Valdes centre (next to Musical Rueben and opposite Ofipapel) You will have to fill in a form. Take your Certificado de registro (green paper) and passport.

Can you go online and check your employer is paying and everything is up to date etc ?

You can ask for a vida laboral which shows exactly what social security contributions are logged in your name (ie full time part time, start of a contract end of a contract etc) see here https://sede.seg-social.gob.es/Sede_1/Lanzadera/index.htm?URL=50 or you can go into the INSS in Los Cristianos and use the freephones to order one - they are sent by post so make sure the Seguridad Social have your up to date address.
You can't check whether your employer is paying, but that's not your problem, the debt is theirs not yours, you get credited whether they have paid or not.
What you should watch for with some unscrupulous employers is a contract being terminated without your knowledge or agreement, ie they put things through as though you had given your resignation - never sign anything you don't understand!!!!
