I have my Black pudding and bacon and my Pork and Stilton sausages in a competition this year but need some ideas for a new flavour sausage.We have a sausage making day at our farm shop on the 17th Sept and would like to try a new flavour on the public..........Any ideas folks..

Just realised - it's us Irish looking to have Green sausages :lol:
You might well turn a shade of green after eating that combo!

Pork, apple and sage.
Pork and Apple Schnapps, Pork and Cider, Pork and Scrumpy, Beef and Red wine or even Lamb and Mojito......................Could call anyone of them The Drunken Sausage
how about a balti sausage? or lamb and mint? turkey with cranberry,sage and onion?
You have given me some ideas to work with folks but keep them coming..........I like the sound of a Balti sausage Marbro8 I will get the pestle and mortar out over the weekend and try some spice combo's...
I like sausages with just chilli and corriander. No need to overdo the chilli. No prizes for burning your mouth; just enjoy the extra zing.
A slight variation on the Thai theme, if you can get it, is to use some Sambag Oleg (hope I spelt that right), a kind of chilli sauce. Waitrose used to stock a good one, but it seems to have vanaished. Be careful though as some available in supermarkets is just trash. Maybe mix your own tomatoes, chilli and corriander etc!

Were you at the Southsea Farmers Mtk a couple of weeks ago as there was a sausage stall there?

We do Beef and Horseradish every 2 weeks.........The farmers markets we do are Fareham and Winchester...

The sausage flavours sound great, trouble is we only eat half fat ones in this house so have to stick to the same old boring fillings as no-one makes low fst ones other than the usual supermarkets.

That's brilliant, Ed. Just realised I hadn't kept up with this thread when we went to the one and only shop here which sells (frozen) English sausages and they'd sold out - apparently gone down very well with the locals. Discovered during this conversation that, by law here, sausages have to be 100% meet so you couldn't put other things in (like leeks for example).
