    Shortbread recipe

    If you need a good shortbread recipe, I just posted my family recipe to FB Tenerife Cooks but if you don't go there, then here is a tried and true recipe that has been in my family for years and passed around to each generation.

    Be careful with measurements (use a standard 8 oz measuring cup) and the oven temperature must be right as well or they will burn.

    This is the much loved family recipe for shortbread passed down from my Aunty Doe (Dulcie, now long passed away) who got it when she was a young bride from a Scottish lady at her church in Canada. The photo is a batch made by my daughter Gillian and her daughter Jessie when they used cookie cutters to cut shapes.

    Aunty Doe's Shortbread

    1/2 pound soft butter
    1/2 cup sifted icing sugar (using standard 8 oz measuring cup)
    2 cups flour

    Mix butter and icing sugar, then add flour
    Aunty used to mix it all by hand so the warmth of her hands helped to blend the butter, but you can mix it gently with a fork or spoon.
    Form into a brick and cut thickly into rectangles or shapes
    Add snips of coloured peel if desired
    Bake on cookie sheet at 135°C (275°F) for one hour

    Megaloo I used to bring measuring cups back from Canada along with measuring spoons but now find Pyrex or similar measuring cups are sold here in supermarkets. However I believe that weighing ingredients is more accurate so use digital scales as well.
